Gnocchetti Alfredo & Our Beautiful Christmas Tree


So I have totally been slacking on making good dinners so I was so excited to make this for dinner on Sunday. I used the recipe from Our Best Bites Cookbook for Guiltless Alfredo Sauce, but instead of putting it on pasta, Kyle gave the idea to put it on Gnocchetti. They're is similar to Gnocchi, which are small dumpling-like potato noodles used in place of pasta (and they cook in 2 min) Sooo amazing! Kyle made some amazing potatoes and dang it was one great meal!

Yayyy it's Christmas time!! Kyle and I hung our stalkings, bought and decorated our tree, and finally.. opened our early Christmas present from Kyle's parents that is our latest addition to our home... Our TV:)

Making Christmas Stockings


Kyle and I thought it would be fun to make our own Christmas stockings this year:) Thank you Hobby Lobby!

We first just cut out a shape from a Cheerios box:

 Then traced them on fleece and hot glued on fabric, ribbon, etc before sewing the edges:

Arizona & Sterling going to the MTC!!

My parents bought Kyle and I plane tickets to surprise the family last weekend to be home before my brother Sterling left on his mission to the Hermosillo Mexico, Spanish speaking mission. It was so much fun in Arizona. When we were down there we took family pictures:)

Kyle and I flew back Sunday night because we had work and school the next day, but Sterling flew up on Tuesday night. Kyle's wonderful parents were so amazing and picked Sterling up from the airport and took him to dinner while we finished school and work and drove down to Centerville that night. The next morning we headed to the MTC with Sterling and stopped by Pizza Pie Cafe for his last meal before the MTC!

So much fun dropping him off!

Fun with da Hubby


Yes, I know alot of my posts are food, but we just LOVE food and LOVE even more to EAT it! :)

Easy Crockpot Sunday dinner:
Potatoes, carrots, chicken, onion, water, and a chicken gravy mix. Mix altogether while at church at delish. I love it with roast also.

Not too difficult but this looked so good I had to take a picture:) We just love our George Forman. 

So.. once again Our Best Bites Cookbook amazes me again! Seriously Everything in that book is soo good. It actually snowed for the first day in Logan so I decided to make soup. YUM!

Halloween 2011!!


What is more fun then to make your own Halloween costumes right? Ha well I did this the night before, soooo if it weren't so last second they would look a tad better but here are parts of our costumes I made: 
Peter Pan & Tinkerbell

Peter's Hat:
I cut 2 strips of brown felt (they're on top of each other), sewed 2 sides but not the bottom-then turned it inside out.

Then I cut two smaller strips and sewed the left side together. Slide the 2 strips insider the hat and sew around the edges.

Flip the edges up and glue in a feather and walaaa..
(For Peter's shirt we just bought a green shirt and cut triangles on the arms and bottm-super simple..

Tinkerbell:
I bought 2 different colors of tule and cut them in 2-3 inch strips. Then tied them on a ribbon altering colors:


I had extra loose pieces that I sewed together to make sleeves. As for the main piece of the top-I just bought a shirt, turned it upside down, glued some sparkles on it and ta-da!

We had a party at our house with some friends over and it was sooo much fun!! Everyone brought amazing desserts while Kyle and I made homemade Rootbeer! Sooo GOOD!

Spaghetti, Potato Wedges, Chicken Chile Verde, & Cream Puffs

Raquel's Homemade Spaghetti Sauce:

So this is like thee best spaghetti sauce in the world. And I'd like to take credit for it:) I found a recipe in a book and didn't have/like some of the ingredients, so I decided to make my own. Kyle said it was the best spaghetti sauce he has ever had. I thought it was pretty dang good myself. 

(Note: This recipe, along with most of my others, are meant to feed just the two of us:) So you'll probably have to quadruple it)

1 t olive oil
1-2 roma tomatoes, diced
1/4 onion, chopped
1/4 t garlic & herb seasoning
italian seasoning, or oregano or rosemary is good!
salt 
pepper
1 t sugar
1 can tomato sauce
1/4 c water

*seasonings are to taste*

**Pout olive oil in pan on med heat. Add chopped onion and simmer 5 min. Add roma tomatoes, garlic & herb seasoning, italian seasoning, and salt & pepper. Simmer 5 min. Add tomato sauce, sugar and water. Simmer 10-15 min (if adding meatballs, add them right now and simmer the meatballs in the sauce to help soak flavor in. I had extra meatballs from my Sweet & Sour Meatball recipe that I froze and pulled out to use in this recipe. SO AMAZING). Top on freshly cooked spaghetti and garnish with parmesan cheese. 



Fresh Potato Fries:

My Mother-In-Law gave Kyle and I 2 bags of potatoes last week, so we decided to try different ways to use them. One of the ways we decided was to make homemade Potato fries. And they are soo easy and soo good! We just used 2 potatoes. Cut them in wedges. In a bowl pour some olive oil and mix seasonings in it example: rosemary, oregano, italian seasoning, and salt and pepper. Dip each potato in the olive oil mixture and place on prepared cookie sheet with tin foil. I lightly crunched tin foil on my cookie sheet so that the potatoes cook evenly, they don't stick, and it's easy clean up! Bake 400' 25-30 min depending on how thick the slices are so just watch them until they're golden brown.

Another reason why I love crock-pots:
Chicken Chile Verde Tacos with Fresh Pico de Gallo:

The recipe I found for this tells you to make your own chile verde.. However.. I just bought salsa verde and added to it and it still tasted amazing. I first sauteed 1/2 chopped onion in olive oil in a pan. Then added salt and pepper, chopped cilantro,1 cup chicken broth, and 1 T sugar. I put a few chicken breasts in the crock-pot and poured the sauce on top. Cook on hight 3-4 hours. It was very delicious but I thought it needed some garlic. 

Pico de Gallo:

Chopped roma tomatoes
chopped onion 
chopped cilantro
juice of 1 lime
salt
pepper
-I usually do more tomatoes then onion but just mix everything until taste. We put this right on our tacos and also just ate it plain with chips. So good and sooo easy.

Make sure you WATCH the puffs in the oven so they don't over cook!! I think mine over cooked a tad but they still tasted amazing!




It says to use mouse in the middle but I had a small carton of whipping cream I thought would be good.. And it was great!

I just whipped the cream, added some vanilla and some Splenda and there you have it. Amazing fresh whipping cream.



When the puffs cook they all have a huge air bubble inside. So I filled a plastic bag with the whipping cream, made a small hole in the bottom, and filled them easily. Then I melted chocolate chips and dipped the tops in them. They're not that pretty, I was in a rush.. Ha but they sure were good.
